If you're looking for a simple dinner recipe, let me make a recommendation - Slow Cooker Adobo Chicken. I made this today because I already had all of the ingredients at home, I could assemble it quickly, and it would cook while Dan and I were at our ballroom dancing lesson. I was skeptical at first because the recipe seemed too simple, but it turned about to be absolutely delicious. After one bite Dan said "wow," which told me he really liked it. I was impressed too. With just a few ingredients this was probably the most flavorful chicken dish I've ever made, and it was certainly the easiest. I didn't follow the recipe exactly (I never do), but the spirit of the traditional Filipino dish was still there. I'll post exactly what ingredients I used tomorrow for my own reference (and in case anyone else would like to try it). The only problem is, there are no leftovers because we ate it all! That's a mark of a good meal.
