Slow Cooker Adobo Chicken
1 lb chicken (I used thin-sliced breasts because they cook quickly) 1/2 large onion (or equivalent), sliced 6 cloves garlic (or less if you wish), chopped 1/2 cup soy sauce (I used the reduced sodium variety) 1/4 cup red wine vinegar 1/4 cup apple cider vinegar 2 bay leaves
Before adding ingredients to the slow cooker, I highly recommend using a Reynold's Slow Cooker Liner. They make cleaning up after dinner ridiculously easy. But anyway, back to the recipe! Put onions and garlic in the bottom of the slow cooker (mine is 5 qt sized and oval-shaped). Put chicken on top of the vegetables. In a bowl, combine the soy sauce and vinegars (you can probably use any kind of vinegar or combination of vinegars as long as the total amount is 1/2 cup). Add bay leaves to the soy sauce and vinegar and pour mixture over the chicken in the slow cooker. Cook chicken on high or low heat until done (I cooked mine for 2 hours on high and then about 2.5 hours on low). Shred chicken in the slow cooker, serve, and enjoy! That's it!
