It may be bad luck, but Dan and I didn't eat any of our original wedding cake on our anniversary. Dan may have had a taste of the frosting, but the cake itself was frozen solid. I need to remember to leave it out to defrost one morning before I leave for work. Maybe then it will be semi-edible at the end of the day. The cake I made in an attempt to recreate our wedding cake turned out pretty well, though. The extra butter didn't ruin it, but the cake was heavy and kind of dry. Next year I'll make a few tweaks and see how I can improve it. Even though it wasn't perfect, it was nice to have cake to eat on our first anniversary. And there's still plenty of leftovers in the fridge for this week!

My parents had saved our cake and I think I visited them by myself (for at least part of the visit) around our first anniversary, so I ate the piece myself... Dave wouldn't have touched it anyway, lol.
